Billie's Apricot and Oat Bliss Balls

Ingredients

  • 320g dried apricots
  • ½ cup desiccated coconut
  • 1 cup rolled oats
  • ¼ cup coconut oil

Instructions

  • Place apricots in a food processor and blitz until finely chopped.
  • Set aside 2 tablespoons of the desiccated coconut for rolling the balls.
  • Add the remaining coconut to the food processor, along with the rolled oats and coconut oil, and blitz until combined.
  • Shape the mixture into 24 even-sized balls, then roll in the reserved coconut to coat.
  • Store in an airtight container in the fridge for up to 2 weeks, or freeze for up to 3 months.
