Billie's Apricot and Oat Bliss Balls

Ingredients
- 320g dried apricots
- ½ cup desiccated coconut
- 1 cup rolled oats
- ¼ cup coconut oil
Instructions
- Place apricots in a food processor and blitz until finely chopped.
- Set aside 2 tablespoons of the desiccated coconut for rolling the balls.
- Add the remaining coconut to the food processor, along with the rolled oats and coconut oil, and blitz until combined.
- Shape the mixture into 24 even-sized balls, then roll in the reserved coconut to coat.
- Store in an airtight container in the fridge for up to 2 weeks, or freeze for up to 3 months.
