Joseph's Banana Pancakes

Ingredients
- 2 bananas
- 1 cup tapioca flour
- 4 eggs
- 1 tbsp milk of choice (add more if you prefer thinner consistency)
- 1 tsp baking powder
- 2 tsp apple cider vinegar
- Optional: 2 tbsp nut butter (eg peanut butter or almond butter)
- Optional: spices to taste (ground cinnamon, ginger, nutmeg, cardamom)
Instructions
- Add chopped banana, tapioca flour, eggs, milk of choice and nut butter (if using) to a food processor or Thermomix
- Blend until smooth (or 20 seconds in Thermomix speed 5.5)
- Scrape down sides of food processor / Thermomix
- Combine baking powder and ACV in a bowl, then add to food processor/ thermomix
- Blend (speed 4, 20 seconds in Thermomix)
- Pour mixture into bowl
- Heat pan to medium and grease with butter (or fat of choice)
- Spoon dollops of mixture into pan and cook pancakes on both sides. Serve and enjoy (Joseph likes them best with honey and peanut butter on top!)
