Banana Pancakes

Joseph's Banana Pancakes

Ingredients

  • 2 bananas
  • 1 cup tapioca flour
  • 4 eggs
  • 1 tbsp milk of choice (add more if you prefer thinner consistency)
  • 1 tsp baking powder
  • 2 tsp apple cider vinegar
  • Optional: 2 tbsp nut butter (eg peanut butter or almond butter)
  • Optional: spices to taste (ground cinnamon, ginger, nutmeg, cardamom)

Instructions

  • Add chopped banana, tapioca flour, eggs, milk of choice and nut butter (if using) to a food processor or Thermomix
  • Blend until smooth (or 20 seconds in Thermomix speed 5.5)
  • Scrape down sides of food processor / Thermomix
  • Combine baking powder and ACV in a bowl, then add to food processor/ thermomix
  • Blend (speed 4, 20 seconds in Thermomix)
  • Pour mixture into bowl
  • Heat pan to medium and grease with butter (or fat of choice)
  • Spoon dollops of mixture into pan and cook pancakes on both sides. Serve and enjoy (Joseph likes them best with honey and peanut butter on top!)
