Curried sausages

Lauren's Curried Sausages

Recipe thanks to Lauren Kalms from Campaspe Community Children’s Centre

Ingredients

  • 8 sausages
  • 1 large onion, thinly sliced
  • 1 ½ tbsp Garam Masala or cumin
  • 1 tbsp plain flour
  • 2 apples, cored and cut into wedges
  • 2 cups chicken stock
  • 1 cup beans
  • Salt and pepper to taste

Instructions

  • Heat 1 Tbsp oil in fry pan and brown sausages all over. Remove from pan and cut into pieces, set aside. Add 1 Tbsp oil to same pan and cook onions until softened.
  • Stir Garam Masala or cumin and plain flour evenly through onions. Slowly add stock, continually stirring to ensure no lumps
  • Add apple, sultanas and return cut sausages to pan. Bring to boil. Reduce heat to low and simmer (covered if possible) for 15mins.
  • Add beans and cream, cook for a further 5mins until beans are cooked.
  • Season to taste.
  • Serve with rice.
