Brittany's Fried Rice (Thermomix recipe)

Ingredients

  • 500g of chicken breast
  • 2 carrots
  • 2 broccolinis
  • 2-3 sprigs of spring onion
  • 2-3 eggs (optional)
  • 1 zucchini
  • 1 clove of garlic (optional)
  • Little dash of milk (optional)
  • ¼ cup water
  • 1-2 cups of rice

Instructions

  • Cut chicken into thin strips and place in veroma dish. Set timer to approx. 30 minutes or until chicken looks evenly cooked. (Veroma mode, full mode and speed on 1.5 ) Once chicken is cooked, shred it in the Thermomix on speed 6 for 10-20 seconds.
  • Cook your rice as per packet instructions. The rice is best cooked the day before and cooled in the fridge, however fresh rice will work too.
  • Cut bacon, carrot, zucchini, broccolini and spring onion into small pieces and set aside.
  • Heat a bit of oil in the wok, add the crushed garlic and spring onion, cook and set aside.
  • Add the carrot, broccolini and zucchini to the wok and add the water. Cook until the vegetables are softened and then set aside all together in the Thermomix heat proof bowl.
  • Whisk the egg and milk then add into the wok. Once eggs are cooked, set aside.
  • Add the bacon and drizzle of olive oil. Cook until crunchy then set aside with egg and veggies in the heat proof Thermomix bowl.
  • Add all the ingredients back into the wok and stir to combine.
