Kate’s Lemon, Soy and Garlic Chicken

Ingredients
- ½ cup flour
- ½ tsp paprika
- 2 chicken fillets sliced into pieces
- ⅓ cup vegetable oil (for sauce)
- 1 tbsp vegetable oil (for cooking chicken)
- 2 lemons
- 1 clove of garlic
- 3 tbsp soy sauce
- Jasmine rice
- Salad of your choice
- Salt and pepper
Instructions
- Preheat oven to 200C
- Place flour, paprika, salt and pepper in a plastic bag
- Add chicken to the bag and shake well
- Heat pan and add 1 tbs vegetable oil
- Fry chicken until brown
- Remove and place fillets into an oven proof dish.
- Make a mixture of the juice and rind of the lemons, garlic, vegetable oil and soy sauce.
- Pour mixture over the fillets and bake in oven for 20 minutes.
- Serve chicken with juices, jasmine rice and salad of your choice.
