Kate’s Lemon, Soy and Garlic Chicken

Ingredients

  • ½ cup flour
  • ½ tsp paprika
  • 2 chicken fillets sliced into pieces
  • ⅓ cup vegetable oil (for sauce)
  • 1 tbsp vegetable oil (for cooking chicken)
  • 2 lemons
  • 1 clove of garlic
  • 3 tbsp soy sauce
  • Jasmine rice
  • Salad of your choice
  • Salt and pepper

Instructions

  • Preheat oven to 200C
  • Place flour, paprika, salt and pepper in a plastic bag
  • Add chicken to the bag and shake well
  • Heat pan and add 1 tbs vegetable oil
  • Fry chicken until brown
  • Remove and place fillets into an oven proof dish.
  • Make a mixture of the juice and rind of the lemons, garlic, vegetable oil and soy sauce.
  • Pour mixture over the fillets and bake in oven for 20 minutes.
  • Serve chicken with juices, jasmine rice and salad of your choice.
