One tray chicken and veggie bake using locally grown ingredients

Whether it's for dinner tonight, tomorrow or mid-week you need to save this recipe. It's all cooked on one tray and keeps all of the flavour and goodness in one place!

One tray chicken and veggie bake using locally grown ingredients

Serves 4

Cooking time: 60 minutes

Ingredients

  • 1.5kg Chicken Drumsticks (or whatever amount you think your family will need!)
  • 3/4 cup plain flour or gluten free corn flour
  • 1 tablespoon smoked paprika
  • 1 teaspoon salt
  • 1 leek washed and roughly chopped
  • About 10 Brussels sprouts chopped into halves
  • 1/4 butternut pumpkin cut into slices and then halved
  • 1/4 cauliflower cut into florets
  • A punnet of cherry tomatoes
  • 1 capsicum
  • 3 cloves garlic peeled and roughly chopped
  • Olive oil - for drizzling
  • 1 cup chicken stock
  • 1 teaspoon of salt
  • 1 teaspoon of dried oregano
  • 1 small bunch chopped parsley (optional)

 Lemon yoghurt sauce ingredients

  • 1/2 cup natural Greek yoghurt
  • 1 clove garlic
  • 1 lemon zested
  • 1/2 lemon juiced

 

Method

  1. Preheat the oven to 190° degrees.
  2. Using a container with a clip top lid add the flour, salt and smoked paprika.  Add the chicken and give it a good old shake.
  3. Drizzle the olive oil onto the tray. Add all of the vegetables and garlic onto a single layer season with salt and oregano and bake for 20 minutes.
  4.  Remove vegetables from the oven and place the chicken pieces on top and add the stock to vegetables. Bake for a further 25 mins. Turn the chicken over and continue to bake for a further 15 minutes until chicken is brown and cooked through.
  5. To make the lemon yoghurt sauce, mix zest, juice and yoghurt together in a small bowl and add salt to taste.
  6. To serve, arrange the vegetables and chicken on a plate, sprinkle over fresh parsley if you like and dollop the yoghurt over the top. Delicious!
