Plum pudding

Ingredients

  • 700grams plums, pitted and halved
  • 1 teaspoon lemon zest
  • 1 egg
  • 3 tablespoons canola oil
  • 1/2 cup reduced-fat milk
  • 1 teaspoon vanilla extract
  • 1/2 cup wholemeal self-raising flour
  • 1/2 cup white self-raising flour
  • 1/3 cup sugar

Method

  1. Preheat oven to 180°C fan-forced
  2. Remove pits from plums if desired and add to the baking dish. Sprinkle over the lemon zest.
  3. Crack egg into a large bowl and lightly whisk with a fork. Mix in oil, milk, and vanilla essence.
  4. Add flours and sugar and mix until combined.
  5. Drizzle the batter over the plums.
  6. Bake for 20 minutes or until top is golden.
