Josie's Pumpkin Soup

Ingredients
- 1 whole pumpkin (butternut)
- 2 brown onions
- 2 tbsp garlic, minced
- 6 washed potatoes
- 2 carrots
- 600ml of thickened cream
- 2ltrs of vegetable stock
- Oregano leaves
- Chives
Instructions
- Cut up the pumpkin, potatoes, carrots and put in a pot.
- Heat pan and cook the onion and mince garlic until slightly brown.
- Once browned up add to the pot of vegetables.
- Add 2L of vegetable stock.
- Let it simmer for 1 and a half to 2 hours until all the vegetables are softened.
- Add Oregano leaves and salt if desired.
- Add cream if making this recipe with dairy and stir it in until it becomes deliciously creamy.
- Next step is to blitz up until all soft in a soup texture.
- Add chives to garnish
